Senatore Cappelli is a premium durum wheat, used for breadmaking and in fine cuisine such as artisanal pasta. It has excellent nutritional values, very similar and sometimes superior to those of khorasan wheat (also marketed under the registered trademark Kamut®, a wheat originating from the United States and Canada), combined with an aromatic, sometimes spicy flavor.

Although it's just over a century old (the centenary of its birth was celebrated in 2015), it's considered an ancient grain because it was widespread before the advent of modern, low-stem, high-protein grains. Its "inventor" is a brilliant Italian agronomist with a very unique story.
