Our grandmothers knew about it by choosing Senatore Cappelli wheat for their pasta. From the top of its ears, this wonderful grain looks at the mill of our supply chain, and then arrives in the form of flour (after a few days) to the master pasta makers, who with experience bring a highly digestible pasta with high nutritional values to your table. This is thanks to a lower presence of gluten given by careful processing and drying at a low temperature.
