Have you ever eaten scones? They're traditional Scottish rolls with a fairly neutral flavor, making them suitable for both sweet and savory dishes. Their preparation is very similar to shortcrust pastry because you mix the flour with butter, sugar, and baking powder.
I stumbled upon a photo of these desserts in a food magazine and wanted to try them right away... I'm always curious to try new desserts and flavors unlike what we're used to. Since it's springtime, I thought I'd enrich them with fresh strawberries and ricotta—a perfect combination!
My husband immediately frowned when he saw them ready in the kitchen... he didn't think they looked very inviting (he's used to that now, given the amount of desserts I bake!), but when he tasted them, he immediately changed his mind... and my kids loved them too; so if they pass the test in my house, I'd say they're definitely worth a try!
In a large bowl, combine the flour, sugar, and baking powder. Add the diced butter and, using your fingertips, incorporate it into the ingredients. The mixture should resemble sand (photo 1). In another bowl, whisk the eggs, then add the milk, ricotta, and grated zest of half a lemon (photo 2).
Pour the liquid mixture into the bowl where you previously "sanded" the flour. Mix the ingredients well. You should obtain a soft dough (photo 3).

Flour your work surface and roll out the dough into a rectangle about 2-3 centimeters thick. Spread the previously washed, dried, and chopped strawberries over half of the dough (photo 4).
Place the other half on top and use a rolling pin to flatten the dough. You should obtain a thickness of about 3 centimeters (photo 5). Using a pastry cutter (if you don't have one, use a small cup or glass), cut out your scones and place them on a baking sheet lined with parchment paper. Bake in a preheated oven at 180°C (350°F) for about 20 minutes.
