Slice the chicory very thinly and cook it in a wok with extra virgin olive oil. Halfway through cooking, add the sage, ginger, olives, and pine nuts.

Meanwhile, cook the penne in salted water. Reserve the cooking water and, a minute before it's done, add it to the wok and sauté it with the vegetables. Add a splash of extra virgin olive oil, a pinch of pepper, and a drop of the cooking water. Stir and serve.
