In this artisanal pasta, we've rediscovered a traditional Italian grain. It's a Khorasan variety introduced to Italy in 400 AD and still cultivated in some areas from which we recovered the seeds. Grown in the mountains at over 1,000 meters above sea level, on land that had lain fallow for over 50 years in the Modena Apennines, stone-ground and artisanally made into a pure pasta, they've created a pasta with a surprisingly aromatic and sweet flavor.

A superb whole wheat pasta, the extremely rare Saragolle wheat is an ancient variety of Khorasan wheat (also known as Turanian, the same as Kamut®, which however is Canadian) introduced to Italy in 400 AD and cultivated for centuries in our country without ever entering into genetic improvement programs.
This artisanal pasta is made with this ancient Italian grain, which is now being rediscovered as a staple in pasta making. This pasta has an aromatic flavor, yet is more delicate and sweeter than other grains. Its nutritional values are significant: it's a high-fiber pasta and a source of protein.

For this artisanal pasta we used our rye, a stone-ground whole grain that gives you all the rustic and aromatic flavor.
Rye is a mountain cereal that adapts well to high altitudes and is resistant to cold climates; it grows in difficult and poor soils such as steppe or moorland and matures quickly.
We produce our rye at over 1000 meters in the mountains, on previously uncultivated land, and we stone-mill it before handcrafting it into pure pasta, creating a surprisingly aromatic and sweet flavor.

Strozzapreti and Shavings
A specialty made from 100% wholemeal rye flour, grown in the Apennine mountains and stone-ground.
Pasta with a slightly rustic, aromatic flavour, grown on pristine soil, bronze-drawn and dried for over a day at low temperatures.
Buckwheat Pasta

For this artisanal pasta, we used our buckwheat, a stone-ground whole grain that gives you an intense, aromatic flavor.
A pasta produced entirely within the AmoreTerra supply chain. The buckwheat is grown in the Modena Apennines and ground there. The milling takes place using a natural stone, kept at a low speed to avoid overheating the product.

Strozzapreti and Shavings
This whole wheat buckwheat pasta is made with 100% stone-ground flour. It's gluten-free and handcrafted, combining the texture and cooking properties of durum wheat pasta with the rich, intense flavor of this grain, which also features hints of cocoa in the finish.
