Senatore Cappelli is an ancient wheat variety (that is, a wheat that was grown before the introduction of modern grain selection techniques for industrial purposes). It was created in the early 20th century by the brilliant Italian agronomist Nazareno Strampelli by crossing different varieties to select their best traits.
It is considered the best durum wheat for pasta making and is widely used in artisanal pasta factories to create high-quality pasta. Among its most appreciated characteristics are its intense aroma, aromatic flavor, high digestibility, and excellent nutritional properties.
