Traditional "LaGranum" pasta


Protecting the biodiversity of Italian wheat has always been our priority, which is why we've created a line of artisanal pasta made from native grains grown by us. These varieties have helped make the quality of Italian pasta known worldwide since the 1950s.

The exclusive AmoreTerra line dedicated to these grains is called "La Tradizionale".

We grow wheat organically on pristine soils in Basilicata and Puglia, areas that in the 1950s and still today were called "the breadbasket of Italy" thanks to their strong vocation for the qualities they can give to durum wheat.

From our crops we obtain a raw material with a high protein content, a fundamental requirement for obtaining good pasta, which is milled by historic millers, so as to obtain a durum wheat semolina with a large grain size, another important requirement for good pasta with high organoleptic profiles of objective quality at the highest levels and desirable standards.

For pasta making, the most delicate phase, we relied on two pasta factories in Basilicata located at an altitude of over 700 meters above sea level to ensure good water quality, as well as the combination of pressure and temperature that is crucial to the final result.

Semolina, mixed with mountain water, creates a dough that is shaped through a bronze die, which scratches the surface, leaving it rough and porous, as per the tradition of master pasta makers. The pasta is then stretched onto wooden frames and aseptic mesh to begin the low-temperature static drying process in an environment with a precise temperature and humidity balance, where it will remain for 12 to 36 hours, depending on the pasta shape.

THE COLOR OF TASTE

A pleasant straw yellow color, an excellent consistency and good cooking resistance are the reasons that make this pasta a product for true gourmands.

"La Tradizionale" AmoreTerra is made using artisanal Italian methods, thanks to the expertise of master pasta makers, whom we feel compelled to protect and pass on.

The goal is to preserve the organoleptic characteristics of the raw materials, which give the pasta its unique character, aroma, texture, and flavor, as well as good digestibility and excellent cooking performance. As soon as you open the package, you can smell the aromas reminiscent of freshly harvested wheat, and when you taste it, its density stands out, giving it an excellent flavor.
