Ready-to-eat, dried legumes and cereals
Under the warm sun of Southern Italy, among the windswept hills of Basilicata, the legumes of the AmoreTerra supply chain grow. The soil is rich thanks to a careful crop rotation.
The complete absence of pesticides during cultivation shapes the appearance of the fields, where legume plants are often covered and hidden by weeds. Farmers patiently wait for them to dry out and crumble in the wind, but if they don't, they must pull them up by hand before harvesting.
Ready-made legumes
The organic legumes we've selected are all grown in Italy and cultivated under the Southern sun on the same organic fields that provide our ancient grains. The warm, dry climate gives these legumes superior firmness and a unique flavor. The result is seeds rich in protein, vitamins, and minerals, ideal for a healthy diet as a substitute for other protein sources.
We present them in two versions: dried or pre-cooked for those who don't have time to prepare them. The two dried lentils, green (perfect in salads or stews) and red (ideal for side dishes and soups), are particularly versatile and don't require soaking.

Dried legumes
The organic legumes we've selected are all grown in Italy, specifically in Basilicata, an ideal region for producing high-quality legumes thanks to its unique soil and climate. Crop rotation (alternating with ancient grains) not only preserves the soil, but also provides the product with a richer mineral content and a full, intense flavor.
With this method we have selected only the best organically grown legumes, obtaining the best nutrient content in the finished product without depleting the soil.

Dried legumes are rich in protein: on average, 25-30% of their energy (i.e., calories) comes from protein, while the remainder comes primarily from carbohydrates and, to a lesser extent, fat. Our organic dried legumes are authentic, just as they are harvested by farmers, packaged in a protective atmosphere to ensure maximum shelf life.
Seeds and cereals
From the high altitudes of the Apennines to the hills of Southern Italy, we've chosen the best locations for each crop. In some cases, we've chosen mountainous cultivation (between 850 and 1,050 meters above sea level) to naturally reduce the presence of pests; in others, we've prioritized the nature of the soil, the temperature range, or the exposure. Crop rotation with legumes and alfalfa provides better nutritional value and doesn't deplete the soil. The result is flavorful grains, ideal for soups and salads or for grinding, and seeds with superior health benefits.
Einkorn wheat, or small spelt, is slightly older and is likely considered the first cereal cultivated by man. It has a single grain per spikelet, which is why it was gradually replaced by more productive species such as emmer wheat. However, it is one of the most unique cereals, rich in nutritional properties.
Buckwheat is an extraordinary grain that has been part of our diet for centuries. Its popularity and popularity are due not only to its excellent nutritional value and intense flavor, but also to its important health benefits.
Hulled barley has remineralizing properties, containing a fair amount of phosphorus, potassium, magnesium, iron, zinc, silicon, and calcium, as well as B vitamins and vitamin E. It also has anti-inflammatory properties, particularly affecting the bladder and intestines, particularly useful for constipation, and in the form of a decoction it stimulates digestion.
