The countdown begins this morning to prepare lunch for my husband to take to the office! I'm happy to share these quick and easy recipes to prove that eating healthy doesn't take a lot of time, as some people often think. All you need is a few vegetables in the fridge, a few versatile ingredients, and a little imagination.
Today's pairing is actually a classic, not particularly original, but always a winner, with the advantage of being quick to cook: radicchio with Taggiasca olives. To round out the dish, I added a handful of cooked chickpeas at the end (I always have a legume ready; try one too; you'll find it can solve many situations). Another alternative idea is to use smoked tofu.
Combining whole grains and legumes is a simple way to create a one-pot meal, complete with all the nutrients, including essential amino acids, rich in complex carbohydrates and fiber, and low in saturated fats in favor of unsaturated fats. In short, a healthy dish!
I usually accompany it with a portion of cooked or raw vegetables, in addition to those contained in the dressing of the dish and a fruit and there you have it, lunch is ready in record time!
