PREPARATION

In a large bowl, combine the flour, salt, sugar, and yeast. Add the water and mix with your hand or a wooden spoon until the ingredients are just combined and form a moist, sticky ball (about 30 seconds). Cover the bowl with plastic wrap and let it rest at room temperature until the dough has doubled in size and the surface is bubbly (about 12-18 hours).



Dust your work surface generously with flour. Turn the dough out onto it, fold it over a couple of times, and then shape it into a slightly flattened ball, keeping the seam facing down (if you're unsure about folding, watch the No-Knead Bread video here). Place a kitchen towel on the counter, dust it with bran or flour, and place the loaf on top. Brush the surface with olive oil and sprinkle with coarse salt. If the dough is sticky, dust it with a little more flour or bran. Fold the towel over it and let it rise for another hour or two. It should approximately double in size. The dough is ready when, when you insert a finger into it, it holds its shape without springing back.

The no-knead Luce stick

About half an hour before the end of the second rising, preheat the oven to 250°C (470°F). Grease a 30x45cm baking pan (I simply lined it with parchment paper, without oiling it). Divide the dough into 4 pieces and gently stretch each piece into a log the length of the pan. Arrange the logs parallel to each other, spacing them about 1.5cm (1/2 inch) apart. Brush them with oil and sprinkle them with coarse salt.

Bake in a preheated oven for 15-25 minutes, until the crust is golden brown. Let the sticks rest on the baking sheet for another 5 minutes, then transfer them to a wire rack and let them cool completely.
