Porridge is very popular in Northern Europe; it's the quintessential breakfast, and if it's so widespread, there must be something good in it, right? In fact, the rolled oats that form the basis of porridge are a very rich grain, not only in fiber and protein but also in healthy fats. They have a warming effect, which explains why they're so popular in Northern Europe.
Ingredients
1/4 cup rolled oats or mixed flakes
1 cup of water
1.5 teaspoons of raisins
1 dried apricot
1/4 apple
1 teaspoon toasted sunflower seeds
a pinch of cinnamon
a pinch of salt
Preparation
Pour the flakes, water, salt, cinnamon, and chopped dried and fresh fruit into a saucepan (other fruit can be used instead of apple, depending on the season), cook for 10-15 minutes, then add the toasted sunflower seeds.
Extra idea : for a richer porridge, you can use vegetable milk, perhaps rice milk, instead of water and add 2-3 walnut kernels.
