Oats are by far the most protein-rich cereal, with a high fiber content, making them a great food for curbing hunger. Combine them with bananas, which are rich in minerals (mainly potassium) and vitamins, and rice milk to create a light, balanced dessert that's excellent for breakfast.
INGREDIENTS
2 ripe bananas
200 g Wholemeal oat flour
vanilla powder to taste
2 tablespoons sunflower seed oil
75 ml rice milk
1 egg
50 g brown sugar
2 teaspoons baking powder
1 pinch of fine salt
PREPARATION
Make banana oat muffins.
Preheat the fan oven to 180°.

Beat the brown sugar and egg in a stand mixer (or with a hand whisk), then add the 2 tablespoons of sunflower oil and beat. Sift the whole oat flour twice with the baking powder and vanilla powder, gradually adding the flour mixture alternating with the room temperature milk, making sure to start and finish with the flour.

Mash a banana with a fork and add it to the mixture, finally adding a pinch of salt.
Place the paper muffin cups in the pan, fill them 3/4 full, decorate each muffin with a slice of banana and bake at 180° for about 20 minutes.
