INGREDIENTS
- 100g fresh rocket
- 180g of linguine
- 4 pieces of soaked dried tomatoes
- 30 g of unpeeled almonds
- pine nuts to taste
- extra virgin olive oil
- Parmesan cheese to taste
PREPARATION
In a blender, blend the almonds, pine nuts, and sun-dried tomatoes. Add a drizzle of oil and blend again. Cook the pasta.

Then add the arugula to the mix and a little of the pasta cooking water until it forms a cream.
Drain the pasta, add the pesto, stir in the oil and, if desired, more of the cooking water, and serve. For those who want, it's really delicious.
