These days spent indoors, where we're less exposed to sunlight, we risk vitamin deficiencies. Vitamin D, for example, cannot be produced by our bodies; we can only obtain it through food and exposure to sunlight. So today I've decided to offer you this one-pot meal. Scamorza, being a dairy product, will provide part of the vitamin we need.
In a nonstick pan, cook the thinly sliced zucchini with oil, basil, and a pinch of salt. In another pan, cook the cherry tomatoes with oil, anchovies, basil, and salt.
Once cooked, add the sauce to the zucchini and sauté the zucchini blossoms until slightly soft. Grate the zest of half a lemon.
Boil the water and throw in the pasta.
Drain the pasta and reserve a little of the cooking water. Add the pasta to the pan with the sauce, add the diced scamorza cheese, and let it melt. Add extra virgin olive oil and pepper. Now you have a delicious dish.
